The Albacore tuna, also called white tuna, is the most noble tuna’s species. With their flesh slightly rosé and their firm texture, these tuna’s medallions can be enjoyed as much semi-backed in the frying pan than grilled to the barbecue with a drizzle of olive oil. Our tuna’s medallions originate from responsible certified MSC fishing. This product is guaranteed without additives and is packed in vacuum packaging for an optimum freshness.

Our Albacore tuna’s medallions originate from Pacific waters around Fiji Island and Cook Island, known for their high pureness and rich underwaters. Sliced on the boat to only keep the most savory and tender tuna’s medallions, they are then immediately frozen.

This product originate from a fishery which answered to the MSC environmental requirements for a sustainable and controlled capture.

Cooking Instructions :

Defrost advise: place the bag still sealed in a big vessel with lukewarm water, let thaw for 15 minutes. Remove the fishes from the bag and let them 10minutes in the fridge before using them.
Cooking in the frying pan: Sear the thawed medallions in a non-stick frying pan over high heat for 2-3 minutes. Return and let the over side cook for 1 to 2 minutes.
Cooking in the oven: preheat the oven to 210°C on convection mode (th7). Remove the frozen fishes from the bag, place them on a baking dish, add a bit of oil and herbs, cover with foil and bake for 10 to 12min.
