Shrimps and avocado bites

Here a simple and original recipe from the blogger Sandra “Cuisine addict” for a festive aperitif: some shrimps and guacamole bites on homemade blinis. With their small spicy and exotic touch, these bites are going to be enjoyed by your guests for sure!

Ingredients

For 4 persons

For the prawns

 

350g of prawn tails Patagonia

½ teaspoon of smoked paprika

½ teaspoon of cumin

½ teaspoon of salt

1 pinch of Cayenne pepper

For the blinis

 

300g of Greek yogurt

2eggs

200g of flour

1 sachet of baking powder

For the guacamole

 

2 ripe avocados

1 lime

½ red onion

1 small hot pepper

1 bunch of coriander

Olive oil

Salt and pepper

Cooking Instructions:

For the blinis:

 

1. Mix all the ingredients in a bowl, then cover with cling film and let rest for 1 hour in the fridge.

2. Cook the blinis by small ladles in a non-sticky pan (or even better in a blini pan to be more regular) with a bit of oil.

3. The blinis are ready to be turned one the dough makes some “holes”.

For the guacamole:

 

1. Chop thinly the onion, the hot pepper and the coriander.

2. Peel the avocados, then reduce them into a mash thanks to a fork.

3. Add the lime juice, the onion, the hot pepper and the coriander. Mix and rectify the seasoning. Set aside in the fridge.

Pour les crevettes:

 

1. Peel the thaw prawn tails and place them in a bowl with the spices and stir well.

2. Brown them in a hot pan for 2-3 minutes.

Dressing: 

Drop a spoon of guacamole on the blinis, add a prawn tail, a coriander leaf and a pinch of salt flower.
