Prawns and mussels quinoa salad

Ingredients

For 4 persons

360g of cooked gourmet organic prawns tails

450g of mussels meat

250g of quinoa

1 cucumber

150g of cherry tomatoes

100g of feta cheese

1 red onion

15cl of olive oil

5cl of balsamic vinegar

The juice of a lemon

Salt, pepper

Cooking Instructions:

1. Thaw and drain the prawns and the mussels.

2. In a sieve, wash and drain the quinoa. Then cook it in a pot with cold water (twice the quinoa volume) for 15 minutes. Once the quinoa is cooked, let cool off.

3. Peel and chop the red onion.

4. Cut the cucumber in small cubes and the cherry tomatoes in two.

5. Mix all the ingredients in a large bowl, then season with oil, vinegar, the lemon juice, salt and pepper.
