Thaw the lobster in its packaging for 12 to 14 hours in the fridge. For a quick thaw, remove the lobster from the packaging, and leave it under cold running water until the ice melts and place it in lukewarm water for an hour. Slice the lobster in two lengthwise. Chilled: in a salad with a citruses vinaigrette. Warm: sprinkle the lobster with a bit of spicy oil or garnish it with butter and place it under the grill for 2 minutes. Serves it with a risotto.
