Dipping sauce for shrimps

You are going to serve shrimps for an aperitif, a buffet or a snacking? Opt for shrimps snacks or White Tiger Prawns from Ecuador. Already cooked and peeled, you only need to defrost them before eating. And to go with it, Escal offers you 3 dipping sauce: an avocado sauce, spiced with a pinch of red hot pepper, a lemon sauce slightly acid and a gourmand cocktail sauce.

Ingredients

For 4 persons

Avocado sauce :

1 avocado
2 green onions
½ red hot pepper
1 tablespoon of coriander
1 tablespoon of lime juice
1 teaspoon of olive oil
75ml of thick cream
Salt, pepper

Lemon sauce:

80g of mayonnaise
50g of fresh cream
Dill
The juice of a lemon

Cocktail sauce:

200ml of Ketchup
1 tablespoon of mayonnaise
2 teaspoons of lemon juice
3 teaspoons of horseradish
Brown sugar
Cayenne pepper
Salt

Cooking Instructions:

Avocado sauce :

1. Cut the avocado in two, remove the stone, peel and cut in dices.

2. Wash the onions, wipe and cut them into thin slices.

3. Remove the seeds of the ½ hot red pepper and cut thinly.

4. Thanks to a ricer, crush roughly the avocado, the onions, the hot pepper, the coriander, the lemon juice, the olive oil and the cream.

5. Season with salt, pepper and your avocado sauce is ready.

Lemon sauce :

1. Mix the mayonnaise, the fresh cream, the dill, the lemon juice and enjoy!

Cocktail sauce:

1. Mix the ketchup, the mayonnaise, the lemon juice, the horseradish with a bit of salt, the brown sugar and the Cayenne pepper.
