Our cod’s backs originate from cold seas located in northern Norway. This particularly cold environment allows a slow growth of the fishes and therefor they can develop their intense and exceptional taste. After being captured, the fishes are carefully sliced and only the upper part of the fillet, also called back, where the flesh is tastier and more tender, is selected. They are frozen directly offshores for an optimum freshness.
This product originate from a fishery which answered to the MSC environmental requirements for a sustainable and controlled capture.

Defrost advise: place the bag still sealed in a big vessel with lukewarm water, let thaw for 20 minutes. Remove the fishes from the bag and let them 10minutes in the fridge before use.
Cooking in the frying pan: Sear the thawed cod’s backs in a non-stick frying pan over high heat for 2 minutes and then over medium heat for 3 to 4minutes.
Cooking in the oven: preheat the oven to 210°C on convection mode (th7). Remove the frozen fishes from the bag, place them on a baking dish, add a bit of oil and herbs, cover with foil and bake for 16 to 18min.
