Ingredients
For 2 persons:
250g of organic salmon fillets
1 teaspoon of roasted sesame
2,5cl of cooking oil
50g of brown sugar
75ml of water
5g of chopped fresh coriander
10g of shredded fresh ginger
½ thinly chopped garlic clove
2 tablespoons of Chinese fish sauce
1 tablespoon of lime juice
The zest of a lemon
1 tablespoon of orange juice
The zest of an orange
Pepper
Salt
Cooking Instructions:
1. Thaw the salmon fillets, rinse them and remove the fishbones and the skin, cut into dices.
2. Into a pot, brown for 10 minutes over medium heats the sugar, the water, the fish sauce, the shredded ginger, the garlic, the orange and lemon zest, the orange and lemon juices. Control the reduction to obtain a syrupy liquid.
3. Warm a bit of oil in large non sticky frying pan, brown the salmon dices 1 minute over high heat, had the reduce sauce and let cook for 2 minutes, constantly stirring. The fish dices should not be over-cooked and the sauce should become syrupy.
4. Dress the salmon dices in a dish, sprinkle with sesame, coriander and some salt, serve quickly, side with rice or pan-fried vegetables.
