
Ingredients
For 4 persons:
330g shrimps cocktail ASC
2 bunch of green asparagus
1 lemon
150g of cream cheese (like Saint Morêt)
½ bunch chopped of chives
10 cl of olive oil
Pepper
Salt
Cooking Instructions:
1. Thaw and drain the shrimps.
2. Cook the green asparagus in a large volume of boiling salted water approximately 8 to 10 minutes, then cool off in ice-cold water.
3. Set aside a few asparagus heads for decoration and mix the rest with cream cheese and the juice of a half lemon, season with salt and pepper (if needed drain in a sieve the mix). Divide the mix in the small glasses and decorate with the asparagus heads and set aside in the fridge.
4. Season the shrimps with olive oil, the juice of a half lemon, salt and pepper. Drop the shrimps on top of the glasses and decorate with the asparagus heads and the chives.
You can also realize these glasses with avocados.
