Summer Salad with nectarines and shrimps

We often desire freshness and lightness during summer. In this case, what is better than a salted and sweet dish highly colourated, with shrimps, zucchinis and nectarines?

Ingredients

For 2 persons

250g of King Size Prawns Ecuador ASC

400g of mesclun

6 nectarines

1 zucchini

Olive oil

Sherry vinegar

½ bunch of basil  

½ bunch of coriander

Cooking Instructions:

1. Thaw the shrimps (see instructions)

2. Stone and cut the nectarines in quarters. Cut the zucchini in thin strips.

3. Mix 3 spoons of olive oil with 1 spoon of sherry vinegar. Then add some chopped herbs and rectify the seasoning.

4. Dress on a plate firstly the salad. Then add the shrimps, the nectarines and the zucchini stripes. Season with the vinaigrette.
